Spicy Prawn con Queso Dip

The perfect appy for Sunday afternoon football - or any time for that matter! This delicious queso dip has it all: shellfish, spice, and of course, lots of cheese!
What you need:
340 grams raw prawns
2 tbsp butter
1 clove garlic, pressed
1 bunch green onions, chopped
1 red bell pepper, finely chopped
1/2 cup pickled jalapenos, finely chopped
1 brick cream cheese, cut into cubes
1.5 cups sour cream
1 cup cheddar cheese, shredded
1 tbsp chili flakes
1 tsp smoked paprika
1 tsp chili powder
1 tsp cayenne
Note: This dip will be quite hot. For a less spicy dip, use less cayenne & chili flakes. You may also substitute the pickled jalapenos for green bell pepper if you prefer a very mild dip.
What you do:
In a cast iron skillet, melt butter on medium-high heat and add prawns & garlic. Cook for only 1-2 mins until only slightly cooked and still transparent. Remove from pan & set aside.
Reduce heat and add all other ingredients except for the cheddar cheese to the skillet. Allow everything to melt together, stirring so that everything is distributed equally throughout the dip.
Chop the prawns into smaller bite sized pieces. Once the contents of the skillet are are completed melted and mixed together smoothly, fold in the chopped prawns and cheddar cheese. Note: At this point, you can allow the dip to cool slightly before placing it in the fridge until you are ready to put it in the oven later on, or, bake it immediately if you want to serve it right away.
Bake at 350 degrees for approx 30 mins until the dip is very hot and the cheddar cheese is completely melted. The top of the dip should begin to brown as in the picture below.
Serve with tortilla chips, crusty bread, and/or raw veggies. Enjoy!
