Orange-Mango & Creamy Coconut Ice Pops

A healthy-ish and oh-so-simple spin on a creamsicle! Greek yogurt and full-fat coconut milk give these frozen treats an insane amount of creaminess, plus some protein! The mango pureed with orange juice is extremely bright and sunny tasting, and it's all given an extra touch of sweetness from just a little bit of honey - local tastes best!
My popsicle molds didn't arrive on time, so I used small plastic cups which worked quite well but were a bit difficult to cut off. I've seen other recipe blogs recommending paper Dixie cups because they're easy to tear off, but the store I was at was sold out. The cups that I ended up using were about twice the size of a 3oz Dixie cup, which resulted in extra large ice pops (which is fine by me)!
The process of making these ice pops is extremely simple. First you will need to make the puree and yogurt mixture, and then simply scoop both mixtures alternately into each Dixie cup. Both mixtures will be slightly runny, so this process can be a bit messy. I recommend doing one cup at a time while holding it directly over the bowls.
Your mixtures should look something like this:

Makes: 8 3oz ice pops or 4 6oz ice pops
Prep time: 10 mins
Chill time: 4+ hours
What you need:
popsicle molds or Dixie cups
popsicle sticks
1 cup frozen mango chunks
1 cup orange juice
1 cup coconut flavoured Greek yogurt
1 cup full-fat canned coconut milk
2 tsp honey, divided
What you do:
In a blender, puree the frozen mango chunks with the orange juice and 1 tsp of the honey until smooth, then set aside.
In a medium sized bowl, mix the Greek yogurt with the coconut milk and the remaining 1 tsp of honey and stir until well combined.
With a spoon, scoop both of the mixtures alternately into your Dixie cups or popsicle molds and when each one is full, gently stick the popsicle sticks into the center of each one.
Chill in the freezer for 4 hours or overnight, or until you are ready to devour them!
To remove the Dixie cups, simply tear off. For popsicle molds, run the mold under hot water for about 10 seconds before gentry removing. Enjoy!
