Greek Yogurt Grilled Chicken Thighs

I love BBQ season! It's so easy to entrain with endless possibilities for fresh, summer salads that can be made ahead of time and the beautiful weather for outdoor grilling makes cooking so much more social.


Boneless, skinless chicken thighs are one of my favourite types of meat for grilling since they are so juicy and nearly impossible to dry out. They are also one of the least expensive cuts of meat, making them ideal to serve for a large cookout. I adore all of the fresh summer flavours and love to make my salads ahead for such occasions, meaning that all I have to do when my guests arrive is grill the meat - what's not to love about that?


This recipe is the perfect protein paring for any summer salad; the Greek yogurt gently tenderizes the chicken, unlike other marinades that can actually render it rubbery and tough.


Prep time: 5 mins

Marinade time: approx 8 hours

Cook time: approx 15 mins

Serves: 8-12


What you need:

  • 12 boneless, skinless chicken thighs

  • ½ cup Greek yogurt

  • 1 bunch fresh rosemary, finely chopped

  • 1 bunch oregano, finely chopped

  • 2 cloves garlic, pressed

  • Salt & pepper to taste

What you do:

  1. Mix together the Greek yogurt, fresh herbs, garlic, salt & pepper.

  2. Pat chicken thighs dry and place in a freezer bag or large bowl. Coat entirely with the Greek yogurt mixture and refrigerate overnight or for at least 7 hours.

  3. When ready to grill, preheat BBQ to medium heat. Grill eat thigh for 5-6 mins per side with the lid closed to maintain heat, until fully cooked through. Cook time will depend on size and thickness of each thigh so use your best judgment!

  4. To serve, top with fresh squeezed lemon juice and more fresh herbs (optional) as well as some fresh cracked salt and pepper. Enjoy!
